Ok, here's some direction.
[Aside: this may come off a little harsh. Don't take it personally.]
I'll metagame a little for you here, but I'm not going to spell it out for you. You'll have to figure it out on your own. There is no one right answer. And success isn't necessarily required.
She is testing you, except for this test you have to come up with the test and take it. You devise what that test is, and bring her the results. You will be graded on both the test itself, and the results you provide.
She wants you to convince her you can be serious and dedicated and are willing to make sacrifices. So do something that shows her you are serious, or that you understand this is a long-term commitment, or something like that. Bring her an item, or proof of some task or deed that shows her some of what she is looking for, and maybe she'll give you a chance. Convince someone to petition her on your behalf who has knowledge of these traits in you. She wants to be reassured you're not going to go Dark Side on her halfway through your training before she will even open the door on that path.
She's told you what she's looking for in a student. It is up to you to convince her you fit the bill.
By the way, (and this boat has already sailed so you missed it) a good first step would have been not giving up on the idea the moment she said no. In RotJ, when Yoda saw Luke, did he say, "Luke, my boy! I've been waiting for you, and I'm happy to train you! Let's get started!" No! He took some serious convincing by both Luke and Obi-wan before he finally agreed. Neither of you made much of a case to convince her to train you, which brings into question your dedication (in her eyes).
Another example: you have both had access to a broken lightsabre for some time now that you could have used to put CP into lightsabr repair so you could learn how to make one of your own, but neither one of you took advantage of that. If you had one, you could have been working on lightsabre combat prior to meeting her, but you never explored it so it remained a missed opportunity.
There is a lot more to RP-ing a Jedi that simply buying Force Sensitivity and throwing CP's into force skills. You can play it that way, but that's not how I'll run it.
Bottom line (meta-game): if you want Jedi training, you are going to have to earn it.
