Shi-Cho needs a disarm maneuver (ie, slice an enemy's weapon)

It does in the non-game articles. It's called the disarming slash (see
http://starwars.wikia.com/wiki/Lightsaber_combat
)

You can do that already, without the need for a specialized move.

So for basic attacks we use the Base Skill (Shi Cho) and add all our other skill dice right? To use the specific skills and features, we use the advanced skills?

No, the other forms are treated as separate skills. Using the other forms gives you certain bonuses (+2D to all defence rolls for Soresu or +1D to all attack and parry for Makashi for example). While using that skill, you get the passive bonus and access to that skill's special moves. Changing between forms counts as an action.
The basic Lightsabre skill is actually Shii Cho. It has special moves specified here:
http://karvis.altarka.org/index.php?topic=206.msg5393#msg5393
Using Shii Cho allows you to make those special attacks, specifically Heavy Strike, Swing attack and Quick Parry, with the specified modified DC's.

Was the Acrobatics question resolved (ie. previous 2 posts)? I wouldn't mind getting it for Niil.
